Spinach and Celery Soup recipe

Preparation Time: 10 minutes | Cooking Time: 30 minutes

This low calorie soup has a delicious flavour and also a luminous green colour. Serve it with some croutons or soft bread and a sprinkling of cheese.


  • 3 large onions
  • 3 large celery stalks
  • 2 carrots
  • 500g spinach leaves
  • 2 litres vegetable stock
  • Black pepper
  • Lemon juice
  • Salt


  1. Dice the onions, celery and carrots. Place into a saucepan with the stock. Simmer for 20 minutes until cooked. Add the spinach and simmer for 2-3 minutes, then blend with a hand blender or in a food processor until smooth.

  2. Season the soup with black pepper, lemon juice and salt to taste.

You could add potatoes to this soup to give it a thicker, creamier texture - just chop them and add them to the soup at the beginning. Recipe serves 6.
