Celery Mashed Potato recipe

Preparation Time: 15 minutes | Cooking Time: 30 minutes

This recipe is an excellent alternative to regular mashed potatoes - it's extra-savoury and flavourful and works brilliantly well with all sorts of roast meats and Sunday dinners.

  • 5 baking potatoes
  • 5 tbsp. diced celery
  • 3 tbsp. butter
  • 5 tbsp. diced onion
  • 4 tbsp. double cream
  • 1/2 tsp. celery salt
  • Black pepper to taste

  1. Dice the baking potatoes into cubes. Place into a pan of cold water, bring to the boil, reduce to a simmer and cook for 20 minutes or until tender.

  2. Meanwhile, melt 1 tbsp. butter in a frying pan and fry the onion and celery until tender, around 10 minutes.

  3. When the potatoes are cooked, drain and place into a pot. Mash until smooth with the cream using a potato masher. Beat the remaining butter in using a wooden spoon, until completely melted, then fold in the onion and celery. Season with the celery salt and black pepper to taste.

I sometimes like to add some chopped fried bacon to this mashed potato for a little extra saltiness and smokiness. Recipe serves 4.
