Fennel and Celery Salad recipe

Preparation Time: 15 minutes

Celery and fennel combine in this surprisingly simple side salad; perfect for pairing with succulent pork or chicken, the crisp fresh flavour of the salad will taste especially good during the summer months.

Ingredients:

  • 2 small fennel bulbs
  • 6 celery stalks
  • 4 tbsp. good quality extra-virgin olive oil
  • 2 tbsp. lemon juice
  • Salt and pepper
  • Fennel fronds
  • Salt and pepper

Directions:

  1. Remove the leaves from the celery sticks along with the bottoms. Thinly slice the celery stalks into matchsticks.

  2. Slice the fennel bulbs as thinly as possible, using a mandolin if you have one, being careful not to chop your fingers!

  3. Scatter fennel and celery on a plate. Dress with the oil and lemon juice, then season with salt and pepper to taste. Scatter with the fennel fronds.

If you like, serve this salad with some lemon wedges so that people can adjust the flavour of the salad at the table. Recipe serves 4.
