Chicken, Celery and Almond Salad recipe

Preparation Time: 10 minutes | Cooking Time: 2 minutes

This simple salad is perfect for putting into sandwiches, serving up at a party or serving with crudites or breadsticks. Celery, chicken and toasted almonds are tossed with mayonnaise, lemon juice and black pepper.


  • 280g cooked chicken meat
  • 1 celery stalk
  • 60g blanched slivered almonds
  • 4 tbsp. mayonnaise
  • 1 tbsp. lemon juice
  • Salt and pepper


  1. Place almonds into a dry frying pan and fry until golden, watching carefully to make sure that they don't catch and burn.

  2. Shred the chicken. Finely chop the celery.

  3. Toss chicken, celery, almonds, mayonnaise, lemon juice, salt and pepper together and place into the fridge until you're ready to use.

If you like, use a little paprika or chilli powder in this salad for a little extra heat and bite. Recipe serves 2.
