Celery and Stilton Soup recipe

Preparation Time: 15 minutes | Cooking Time: 30 minutes

This well-flavoured soup is the perfect lunch dish for lovers of blue cheese. Celery is simmered in vegetable stock with an onion before being pureed until smooth - easy peasy! Serve with soft bread rolls and extra Stilton crumbled on top.


  • 100g celery
  • 1 onion
  • 1 litre vegetable stock
  • 100g Stilton cheese
  • 2 tbsp. butter
  • Salt and pepper


  1. Thinly slice the onion and chop the celery. Melt the butter in a saucepan over a low heat and add the onion. Fry for ten minutes until translucent.

  2. Add the celery and stock and bring to a simmer. Cook for 30 minutes until the celery is soft.

  3. Add the cheese to the soup and puree the soup in a food processor until smooth. Season to taste with salt and pepper.

You can add a carrot to the soup for a bit of sweetness or a couple of potatoes to make it extra creamy. Recipe serves 4.
