Celery and Potato Soup recipe

Preparation Time: 10 minutes | Cooking Time: 30 minutes

This creamy and decadent soup is perfect for lunch, dinner or even a dinner party. Make it a little bit extra special by serving with some crumbled stilton or croutons.

Ingredients:

  • 100g potato
  • 5 celery stalks
  • 1 leek
  • 25g butter
  • 700ml veggie stock
  • 1 bay leaf
  • 300ml milk
  • Salt and pepper

Directions:

  1. Dice the potato. Finely dice the leek and celery stalks. Melt the butter in a large saucepan and add the potato, celery and leek.

  2. Cook gently for 5 minutes, then add the stock and bay leaf. Cook gently for 20 minutes or until the veggies are tender.

  3. Remove the bay leaf and leave the soup to cool slightly. Pour into a blender and whiz until smooth. Return to the pan, add the milk and heat gently, but do not boil. Season to taste and serve warm.

Serve this soup with plenty of soft bread rolls. Recipe serves 4-6.
