Creamy Celery Lentils recipe

Preparation Time: 10 minutes | Cooking Time: 15 minutes

This wonderful combination of earthy lentils, celery, onion and mustard makes for a delicious side dish perfect for pairing with all sorts of meat and fish dishes.

  • 350g red lentils
  • 150g celery
  • 1 onion
  • 500ml chicken stock
  • 1 tbsp. mustard
  • 1 tbsp. oil
  • 100ml single cream
  • Salt and pepper

  1. Finely dice the onion and celery. Heat the oil in a large frying pan. Add the onion, lentils and half the celery. Fry for 2-3 minutes, then add the stock. Scrape any browned bits off the bottom of the pan and bring to the boil. Simmer for 5 minutes.

  2. Cook until nearly all of the liquid has evaporated from the lentils. Add the cream and remaining celery and season with salt and pepper and cook for 1 more minutes, then serve immediately.

I like to season this with a little celery salt for extra celery savoury flavour. You could also add a garlic clove or two for extra flavour. Recipe serves 4.
