Creamy Celery and Garlic Soup recipe

Preparation Time: 15 minutes | Cooking Time: 20 minutes

This simple winter soup combines the flavours of celery, garlic, leek and onion with some soft cheese. Choosing a cheese that already contains herbs and garlic ensures a well-flavoured soup - plus, it's less effort for you! Serve with soft bread rolls.

Ingredients:

  • 8 sticks celery
  • 1 leek
  • 1 red onion
  • 500ml chicken stock
  • 2 large garlic cloves
  • 75g butter
  • 2 tbsp. olive oil
  • 100g garlic and herb cream cheese
  • 50ml milk
  • Salt and pepper

Directions:

  1. Finely dice the onion and garlic cloves. Remove any stringy bits from the celery stalks and finely dice the flesh. Slice the leek in half lengthways, then slice each half in half before finely dicing the flesh.

  2. Melt butter with the oil in a large saucepan. Add the onion, garlic, celery and leek and fry for ten minutes over a medium heat until soft and golden.

  3. Add the stock, salt and pepper and simmer for 20 minutes. Stir in the milk and cream cheese and stir until the cheese dissolves. Blend until smooth using a hand blender or food processor.

If you like, garnish the soup with some cooked diced bacon for a little saltiness. Recipe serves 2.
