Braised Celery recipe

Preparation Time: 15 minutes | Cooking Time: 30 minutes

This is an unusual way to cook celery - the chicken stock makes it take on a deeply savoury flavour, and the braising makes it wonderfully soft and tender, perfect for pairing with all sorts of meats and veggie dishes.


  • 1 bunch celery
  • 225ml chicken stock
  • 2 tbsp. butter
  • 1/2 tsp. each salt and pepper
  • 1 tbsp. freshly chopped parsley


  1. Arrange the celery in a single layer on the bottom of a large frying pan. Dot with butter, season with salt and pepper and pour the stock over the celery.

  2. Cover the pan and bring to a boil over a medium heat. Reduce the heat to low, simmer for 30 minutes until tender then sprinkle with the parsley to serve.

If you're vegetarian, you can easily use a well-flavoured vegetable stock instead of the chicken stock. Recipe serves 4.
