Warm Beef and Celery Salad recipe

Preparation Time: 10 minutes | Cooking Time: 5 minutes

This warm salad manages to feel luxurious without being too heavy. Beef, celery, mushrooms and red onion combine in a simple dressing made with lemon, olive oil and anchovies. Deliciozo!

Ingredients:

  • 200g chestnut mushrooms
  • 1 celery heart
  • 1 red onion
  • 400g beef steaks
  • 75g parmesan cheese, shaved
  • 3-4 tbsp. lemon juice
  • 5 tbsp. extra-virgin olive oil
  • 100g salad leaves
  • 4 anchovy fillets in oil, minced
  • 1 garlic clove
  • Salt and pepper

Directions:

  1. Thinly slice the mushrooms and celery heart. Finely dice the onion. Toss salad leaves, mushrooms, celery, red onion and parmesan in a bowl.

  2. Rub the steak with 1 tbsp. oil. Season either side with salt and pepper and fry in a very hot frying pan on either side until seared, around 1-2 minutes either side depending on how you like your steak done. Leave to rest under foil.

  3. Meanwhile, mash the anchovy fillets with the garlic clove. Whisk in the remaining oil and lemon juice and season to taste. Drizzle most over the salad and toss to combine. Place onto 2 plates.

  4. Slice the beef on the diagonal, arrange over the salad and then finish with the rest of the dressing.

If you prefer, you can cook the mushrooms before adding them to the salad - just make sure you've removed most of the moisture from them so that you don't get a watery salad. Recipe serves 2.
